I went to the market and I bought… Some slow proved bread from the bakery still hot from the oven, some cider from Pawley Farm, new potatoes, carrots, rhubarb and gooseberries from Ash, fresh mint, tarragon and cherry tomatoes from Walmestone Growers, some sweet peas from Badlesmere and spectacular ruby chard from Perry Court. I bought some flower Marie ewe’s cheese from Tom and some creamy Exmoor blue to go with the port from Clive. At the butchery I bought a wild rabbit, some oxtail for Mondays supper and some home cured smoked bacon. I bought a large sea bass from Simon Fish who also talked me into some sardines for breakfast. I bought some sausage rolls; fish cakes and chocolate mousse from Patrick and Jonny made me a Sandwich for the journey home…

Here at Pawley Farm, we believe in doing things the old fashioned way. All our cider is produced on the farm using our own apples and a traditional kentish recipe that has been handed down through the family. The cider is unpasteurised and brewed in solid oak casks for between 18 months and two years. Pawley Farm cider is approximately 8% ABV and comes in Dry, Medium and Sweet varieties. We also produce a mulled cider which is approximately 6% ABV and can be served warm. In addition to cider, we make our own fresh apple juice, using apples from the orchards at Pawley Farm. The juice is lightly pasteurised, with Vitamin C. Pawley Farm Apple Juice has no added sugar, making it a healthy, natural drink for children. We offer several different varieties of juice, so there is bound to be something to suit all tastes.

My truffles are handmade with very high quality couverture chocolate. I create my own recipes, selecting specific origin chocolate that compliments each one. I don’t add sugar or use concentrates, flavourings or artificial preservatives.

Sample menu; white stilton with apricot and lime oil in Belgian white chocolate, cranberries soaked in chili infused vodka and orange oil in chocolate from Papua New Guinea 64%. Strawberries and basil in pear liqueur in 33% milk Javanese chocolate. Roasted garlic, black pepper, toasted almond and Calvados in Venezuelan chocolate 70%. Sour cherry and almond soaked in Armagnac in Costa Rican chocolate 64%. Sauteed sweet potato in butter and Tarragon, roasted almonds and Kentish cider in Tanzanian 75%.
